Creamy mashed potatoes is the ultimate comfort food. A twist on one of our favourite potato recipes, we’ve added soft cheese into the mix to transform this simple dish into, quite simply, the best mashed potatoes ever! Perfect as a side or as an accompaniment to low-fat sausages or mince, you could even swap in sweet potatoes to make it extra healthy.

Ingredients

Potatoes, Raw

1000 g, (1kg), peeled and cut into large chunks

Salt

½ teaspoon(s)

Medium fat soft cheese

100 g

Skimmed Milk

4 tablespoon(s)

Black pepper

teaspoon(s)

Instructions

  1. Put the potatoes into a large saucepan and cover with cold water. Add the salt and bring up to the boil. Cover and simmer for about 20 minutes, until tender.
  2. Drain the potatoes, then mash with a potato masher. Beat with a wooden spoon for a few moments, then beat in the low fat soft cheese and milk.
  3. Reheat the mash over a low heat, stirring all the time to prevent sticking. Season with black pepper, then serve.

Notes

Use a combination of half potatoes and half butternut squash for a delicious variation.
