Ingredients

White Self Raising Flour

125 g

Light Brown Sugar

1 tablespoon(s)

Ground Cinnamon

1 teaspoon(s), level

Semi Skimmed Milk

250 ml

Egg, whole, raw

1 medium, raw

Vanilla Extract

½ tablespoon(s), level

Calorie controlled cooking spray

4 spray(s)

Apple

3 medium, Braeburn apples, peeled, cored and cut into 5mm-thick rings (you’ll need 16)

0% fat natural Greek yogurt

125 g

Instructions

  1. To make the batter, combine the flour, sugar and ground cinnamon in a large bowl, make a well in the middle, then set aside. Whisk the milk, egg and vanilla in a jug, then pour into the flour mixture and whisk until you have a smooth batter.
  2. Heat a large nonstick frying pan over a medium heat and mist with cooking spray. In batches, coat the apple slices in the batter and fry until golden brown, about 4 minutes per batch, flipping halfway through. Transfer to a baking sheet lined with kitchen paper to drain.
  3. Serve four apple ‘fritters’ per person, with the yogurt spooned over.
