A traditional style one pot dish that’s packed with flavour and makes a great winter warmer.

Ingredients

Vegetable stock cube

1 cube(s), make up to 400ml

Bay leaf, dry

1 leaf/leaves

Pearl barley, dry

20 g, washed

Celery, Raw

1 stick(s), chopped

Carrots, raw

1 medium, chopped

Leek

1 medium, trimmed and chopped

Chicken breast, skinless, grilled

120 g

Chives, Fresh

1 teaspoon(s)

Instructions

  1. Put the stock and bay leaf in a lidded pan and bring to the boil. Add the pearl barley, bring back to the boil, cover and simmer for 15 minutes. Add the vegetables, return to the boil, then cover and simmer for a further 15 minutes or until the pearl barley is just tender.
  2. Shred the chicken breast and add to the pan to warm through for a couple of minutes. Season to taste and serve in large bowls, garnished with chopped chives.
