This is perfect if you fancy adding a Mexican twist to your breakfast.

Ingredients

Calorie controlled cooking spray

4 spray(s)

Red onion

1 small, finely, diced

Red pepper

1 medium, deseeded and diced

Chilli, green or red

1 individual, green

Ground Cumin

½ teaspoon(s), level

Paprika

½ teaspoon(s), level

Egg, whole, raw

4 medium, raw

WW White Wraps

4 individual

Avocado

155 g, peeled, stone removed and diced

Borlotti beans, cooked

1 can(s), large, drained

Half fat Cheddar cheese

60 g

Coriander, fresh

2 tablespoon(s)

Hot Pepper Sauce (Tabasco)

1 splash(es), to serve

Lime

1 medium, wedges to serve

Instructions

  1. Mist a large nonstick frying pan with cooking spray and set over a medium heat. Add the diced onion, pepper and chilli and cook for 6-8 minutes until the onion and pepper are soft. Add the cumin and paprika and cook for another 1-2 minutes.
  2. Whisk the eggs in a mixing bowl with 1 tablespoon of water. Reduce the heat to low and add the eggs to the pan. Cook for about 5-7 minutes, folding the mixture with a silicone spatula, until the eggs are just barely set. Season to taste.
  3. Heat the wraps in the microwave to pack instructions. Lay the wraps on a work surface and top with the eggs, followed by the avocado, beans and cheese. Season to taste, then scatter over some of the coriander and a few drops of Tabasco.
  4. Tuck in the ends of the wraps and roll each one up, then serve with the lime wedges on the side.
