Chop whatever vegetables you have lurking at the back of the fridge and use in this quick and easy scramble.

Ingredients

Calorie controlled cooking spray

4 spray(s)

Peppers, all types

½ medium

Potatoes, boiled

100 g

Cherry Tomatoes

4 individual, sliced

Onion

½ small, finely chopped

Egg, whole, raw

2 medium, raw, beaten

Low Fat Soft Cheese

1 serving(s)

Basil, fresh

1 tablespoon(s)

Instructions

  1. Sauté the chopped veg over a medium heat in a frying pan misted with cooking spray, until browned.
  2. Add the eggs, season to taste and cook, stirring, until scrambled – for about 2 mins. Then stir in the soft cheese. Top with some fresh basil, if you like.
