Kick start your day and metabolism with these scrambled eggs with a hint of chilli powder, paprika and cumin. Who would have thought tortillas for breakfast was such a great idea!

Ingredients

Egg(s)

4 medium

Tomato(es)

1 medium, finely chopped

Red capsicum

½ large, finely chopped

Ground cumin

¼ tsp

Smoked paprika

½ tsp, large pinch

Chilli powder

½ tsp, large pinch

Olive oil

1 tsp

Canned black beans, rinsed, drained

1 cup(s), (175g) warmed

Fresh coriander

cup(s), chopped

Instructions

  1. Whisk eggs in a large bowl until combined. Stir in tomato, capsicum, cumin, paprika and chilli. Season with salt and pepper.
  2. Heat oil in a large non-stick frying pan over medium-low heat. Pour in egg mixture and cook, stirring occasionally with a straight-edged spoon, for 1–2 minutes or until softly scrambled. Sprinkle with coriander to serve.

Notes

SERVING SUGGESTION: Tortillas. VARIATION: You can use four-bean mix instead of black beans.
