Easy to make, this salsa is delicious with anything grilled or broiled such as fish, beef, chicken or pork.

Ingredients

Watermelon

4 cup(s), seedless, chopped into small pieces

Cucumber

1 cup(s), seedless, chopped into small pieces

Uncooked scallions

½ cup(s), chopped into small pieces (green and white parts)

Yellow bell pepper

½ large, chopped into small pieces

Jalapeño pepper

1 large, seeded, finely minced (do not touch seeds with bare hands)

Cilantro

1½ tbsp(s), fresh, minced

Peppermint leaves

1½ tbsp(s), fresh, minced

Sugar

1 tsp(s)

Olive oil

1 tbsp(s)

Fresh lime juice

1 tbsp(s)

Instructions

  1. Toss all ingredients together in a large bowl. Serve at room temperature or chilled. Yields about 1/2 cup per serving.

Notes

If you plan to make this recipe ahead of time, chop up and toss together the watermelon, vegetables and herbs, but wait to combine them with the sugar, olive oil and lime juice until just before serving.
