Enjoy this light and tasty dessert. If you cannot find fresh strawberries, substitute them with frozen ones (without added sugar).

Ingredients

Light cream cheese

8 oz

Strawberry fat free yogurt

1 cup(s)

Honey

1 tbsp(s)

Vanilla extract

1 tsp(s)

Unsweetened gelatin with sugar substitute

¼ oz

Strawberries

1½ cup(s), thinly sliced

Graham cracker pie crust

6 oz

Water

¾ cup(s)

Instructions

  1. In a large bowl, beat cream cheese until smooth. Stir in yogurt, honey and vanilla.
  2. In a saucepan, sprinkle gelatin over 1/4 cup water; allow to soften 1 minute. Stir over low heat to dissolve gelatin.
  3. Stir gelatin mixture and remaining 1/2 cup water into cheese mixture. Fold in 1/2 cup sliced strawberries. Pour into crust. Cover with foil and refrigerate overnight.
  4. To serve, top pie with remaining strawberries and cut into 8 slices.
