Sure, making a big-batch dessert is great, but sometimes you just want and need enough for yourself. This easy crisp comes to the rescue. Using a small apple, a cup of frozen berries, and an individual oatmeal packet, it’s right-sized for one person. Since we lean on the fruit for sweetness and don’t add any sugar to the filling, opt for a sweeter apple variety like Honeycrisp, Gala, or Braeburn. Be sure to give the apple a head start on cooking in the microwave; otherwise it will remain crunchy in the crisp.

Ingredients

Apple

1 small, peeled, cored, and thinly sliced

Frozen unsweetened mixed berries

1 cup(s)

Cornstarch

1 tsp(s)

Ground cinnamon

½ tsp(s), divided

Quaker Fiber and Protein Maple Brown Sugar Oatmeal

1 packet(s)

Light butter

2½ tsp(s), melted

Instructions

  1. Preheat the oven to 375°F. Line a small sheet pan with foil or parchment paper.
  2. Place the apple in a medium microwave-safe bowl; cover and microwave on High until the apples start to soften, 3 to 4 minutes. Uncover and add the frozen berries (no need to thaw); cut any large strawberries in half. Stir in the cornstarch and ¼ tsp cinnamon. Spoon the filling into a 12-ounce ramekin or gratin dish.
  3. In a small bowl, stir together the oatmeal, remaining ¼ tsp cinnamon, and butter until evenly moistened. Sprinkle the oatmeal mixture on top of the filling. Place on the prepared pan. Bake until the topping is browned and crisp and the filling is bubbly, about 25 minutes.
