Ingredients

Water

Olive oil

2 tbsp(s)

Red wine vinegar

2 tbsp(s)

Cherry tomatoes

1½ cup(s), or grape tomatoes, sliced in half, divided

Fresh parsley

¼ cup(s), fresh

Garlic

1 clove(s), large, minced

Sugar

¾ tsp(s)

Table salt

¾ tsp(s)

Black pepper

¼ pinch(es), freshly ground

Mixed greens

Instructions

  1. Place all ingredients except 1 cup of tomatoes and mixed greens in a blender or mini-chopper; blend thoroughly.
  2. Place greens and remaining 1 cup of tomatoes in a medium bowl and toss with dressing.
  3. Yields about 1 1/2 cups of mixed greens and 2 tablespoons of dressing per serving.
