1% low fat cottage cheese

½ cup(s)

Fresh spinach

1 cup(s), chopped

Sun-dried tomatoes (without oil)

Instructions

  1. Preheat oven to 350°F. Grease 12 bmuffin pan cups with cooking spray.
  2. In a blender, puree the egg whites and cottage cheese until just smooth (do not over blend), about 10 to 15 seconds. Transfer to a medium bowl.
  3. To bowl, add the spinach, sun dried tomatoes, chives, hot sauce, garlic powder, smoked paprika, salt, and pepper. Stir to combine. Divide among cups of muffin pan. Add 1/4 tsp of goat cheese to each muffin cup.
  4. Bake for 18 to 22 minutes, until set.
  5. Serving size: 1 egg white bite
