Shallots

1 small, minced

Red bell pepper

2 tbsp(s), minced

Uncooked Canadian bacon

2 slice(s), diced

Raw egg

Water

Reduced-fat cheddar cheese

Instructions

  1. In mug, combine shallot and pepper and spray with nonstick spray; microwave 2 minutes.
  2. Stir together bacon, eggs, water, 1 tbsp cheese, and a pinch of salt and pepper; pour into mug and stir to combine. Microwave 1 minute; stir well.
  3. Microwave an additional 30 seconds; stir. Top with remaining 1 tbsp cheese; microwave 30 seconds to melt.
  4. Serving size: 1 mug omelette
