This curried chickpea salad sandwich is prepared with creamy non-fat Greek yogurt, zesty lemon and fragrant curry for a veggie sandwich that’s loaded with yummy flavours.

Ingredients

WW Multigrain bread

2 slice(s), toasted

Canned drained chickpeas

½ cup(s), low-sodium or no-salt added, drained, rinsed and smashed

Plain fat free Greek yogurt

2 tbsp(s)

Fresh lemon juice

1 tbsp(s)

Curry powder

2 tsp(s)

Table salt

1 pinch(es)

Black pepper

1 pinch(es)

Carrots

¼ cup(s), shredded

Scallions

1 medium, thinly sliced

Raisins

1 tbsp(s)

Cucumber

¼ cup(s), sliced

Lettuce

2 leaf/leaves, large

Instructions

  1. Mix together smashed chickpeas, yogurt, lemon juice, curry powder, salt and pepper until blended. Stir in carrot, green onion and raisins.
  2. Assemble curried chickpea salad, cucumber and lettuce between slices of toasted bread.
  3. Serving size: 1 sandwich
