This recipe is a fabulous make-ahead lunch option, as the flavours only get better the next day. It’s mayo-free but still creamy (thanks to Greek yogurt) and heartier than traditional tuna salad because of the chickpeas.

Ingredients

Plain fat free Greek yogurt

cup(s)

Dijon mustard

2 tsp(s)

Italian seasoning

½ tsp(s)

Red onion

2 tbsp(s), chopped, chopped

Capers

1 tbsp(s), chopped

Canned drained chickpeas

15 oz

Canned tuna packed in water

5 oz

Mixed greens

3 cup(s)

Instructions

  1. In a medium bowl, stir together the yogurt, Dijon, and Italian seasoning until well combined. Stir in the onion, capers, chickpeas, and tuna. Serve over the salad greens.
  2. Serving size: 1 ½ cups greens and 1 cup chickpea mixture
