This lightened up version of classic New York-style cheesecake tastes just as creamy and delicious as the original. It's so good that it might just become your new go-to favourite. An easy way to crush the graham crackers is to place them in a large zip-close plastic bag, squeeze out the air, and seal the bag. Use a rolling pin or the bottom of a heavy saucepan to turn the crackers into fine crumbs.
