Clafoutis is a baked French dessert traditionally with black cherries. Our version uses fresh blackberries and almond extract to add to the nutty flavour.

Ingredients

All-purpose flour

½ cup(s)

Raw egg

3 large

Baking soda

1 tsp(s)

Vanilla extract

1 tsp(s)

Almond extract

1 tsp(s)

Lemon zest

½ tsp(s)

Kosher salt

¼ tsp(s)

1% low fat milk

¾ cup(s)

Sugar

1½ tbsp(s)

Sunflower oil

1 tsp(s)

Blackberries

1 cup(s)

Slivered almonds

1 tbsp(s)

Powdered sugar (confectioner's)

Instructions

  1. Preheat oven to 180 C (350 F). Combine flour and baking soda in a large bowl. Whisk in eggs, one at a time, until you have a smooth batter. Whisk in vanilla, almond extra, zest, salt, and milk. Stir in granulated sugar and set aside.
  2. Heat a 20-cm (8-inch) flameproof skillet or metal pie pan over low heat until warm. Remove from heat and quickly brush with oil. Pour in batter, scatter berries on top, and sprinkle on almonds.
  3. Bake for 30-35 minutes or until clafoutis is puffed and golden. Slice into 6 pieces, and dust with icing sugar to serve.
  4. Serving size: 1 slice

Notes

Preheating the pan will speed up the baking time and ensure the base cooks evenly. Add 99% fat-free plain yogurt to serve (contains dairy). Swap blackberries for fresh raspberries or blueberries.
