Instead of fresh berries you can also use thawed frozen berries.

Ingredients

Strawberries

¾ cup(s), diced

Raspberries

¾ cup(s)

Banana

1 medium

Plain fat free Greek yogurt

¾ cup(s)

Sugar

1 tbsp(s)

Vanilla extract

¼ tsp(s)

60-69% dark chocolate

3½ oz

Instructions

  1. In a medium bowl, mash together the strawberries, raspberries, and banana with a fork to form a puree. Stir in the yogurt, sugar, and vanilla extract. Divide the yogurt-fruit mixture between 15 silicone ice cube molds. Tap the mold once on the work surface to remove any air bubbles. Freeze for at least 5 hours.
  2. Remove the “nice” cream bites from the mold, place them on a parchment-lined plate, and put the plate in the freezer.
  3. Melt the chocolate in a microwave or over a water bath. Pour the melted chocolate into a narrow container and dip ⅓ of each “nice” cream bite into the chocolate, upside down, one at a time, and let it drip briefly. Place the bites on the same plate, drizzle with the remaining chocolate, and freeze for at least 15 minutes.
  4. Serving size: 1 “nice” cream bite

Notes

Allow the “nice” cream bites to thaw for 5 minutes before serving.
