Truffle and cheese go together beautifully. Make this grilled cheese toastie on a rainy day and be utterly comforted!

Ingredients

Wholemeal bread

8 slice(s), (8 x 35g slices)

Truffle mustard

1 tbs

Low-fat mayonnaise

1 tbs

Provolone cheese

40 g, grated

Extra light cheddar cheese

40 g, grated

Reduced fat oil spread

3 tsp

Instructions

  1. Spread each slice of bread evenly with truffle mustard and mayonnaise. Season with pepper. Sprinkle provolone and cheddar over 4 slices of bread and top with remaining 4 slices to make 4 sandwiches.
  2. Heat half the oil spread in a large frying pan over medium-high heat and melted. Carefully place 2 sandwiches in the pan and press down with a spatula. Cook for 5 minutes on each side, or until bread is toasted and cheese has melted. Repeat process with remaining oil spread and sandwiches. Cut toasted sandwiches in half diagonally and serve.

Notes

If you can't find truffle mustard, you can mix 1 teaspoon of truffle paste with 3 teaspoons of mustard.
