Black rice in a dessert? Believe it or not, it works! If you like your desserts on the sweeter side, add a little maple syrup to the rice mixture.

Ingredients

Black rice

1 cup(s), (180g)

Fresh dates

12 individual, pitted

Fresh berries

1 cup(s), (160g) mixed variety

Chia seeds

2 tsp

Vanilla bean extract, alcohol free

2 tsp

Banana(s)

2 medium, chopped

99% fat-free, plain or natural yoghurt, unsweetened

¾ cup(s), (180g)

Flaked almonds

1 tsp, toasted

Instructions

  1. Cook black rice following packet instructions, allowing 3 minutes additional cooking time. Drain and set aside to cool.
  2. Combine dates and 1 tablespoon boiling water in a large microwave-safe bowl. Cover and microwave on High (100%) for 1 minute. Process berries, chia seeds, half the dates and 1 teaspoon vanilla in a food processor until smooth. Transfer to a small bowl and set aside.
  3. Process two-thirds of the cooked rice with bananas, yoghurt and remaining dates and vanilla in same clean food processor until combined and creamy. Transfer mixture to a large bowl and stir in remaining cooked rice. Divide mixture among 4 x 1-cup capacity serving glasses. Top with berry mixture and smooth tops with the back of a spoon.
  4. Cover and refrigerate for 4 hours or overnight. Sprinkle with almonds to serve.

Notes

Serve topped with mint leaves for a pop of colour and freshness.
