This gorgeous red fruit salad tastes equally well chilled or at room temp; in fact, it gets better as it sits, allowing the fruit time to absorb the flavors of the ginger, lime juice, and mint with the grated ginger adding surprising heat. We call it strawberry salad, but there's also a nice amount of watermelon mixed in too. The recipe calls for using a melon baller to scoop out the melon, but you can just as easily cut it into bite-size cubes.

Ingredients

Fresh lime juice

2 tsp

Minced ginger

2 tsp, grated peeled fresh ginger

Dried mint

½ tsp

Kosher salt

1 pinch(es)

Watermelon

1½ pound(s), seedless

Strawberries

12 oz, (about 24 medium-size berries), hulled and halved

Fresh basil

12 leaf/leaves

Instructions

  1. In large serving bowl, mix lime juice, ginger, mint, and salt. Using melon baller, scoop 1-inch balls from watermelon, leaving white and green rind behind. (You can also cut watermelon into cubes.) Add watermelon and strawberries to bowl.
  2. Stack basil leaves. Roll stack tightly into cigar shape and thinly slice into ribbons. Toss basil into salad. Let stand for 30 minutes at room temperature, or cover and refrigerate for up to 4 hours.
  3. Serving size: about 1 cup
