This French comfort-food favorite is a wonderful lunch or brunch entrée, and it is ready in just 20 minutes. This version sticks pretty close to the classic sandwich: a ham and cheese sandwich dunked in egg and then cooked in a skillet until browned and crisped. It’s quick to make and wonderfully satisfying to eat. Pair it with a fresh side salad for a complete meal. If you’re not a fan of honey mustard, feel free to mix plain yellow mustard with the mayonnaise. You can cut each sandwich into four pieces to serve as small bites for use as a bite-sized party appetizer. Your guests will thank you.

Ingredients

Honey mustard

2 tsp

Reduced calorie mayonnaise

2 tsp

Reduced-calorie whole wheat bread

4 slice(s)

Low fat Swiss cheese

3 oz, use four 3/4 oz slices

Cooked lean ham

4 oz, cut into 4 slices

Egg

2 large egg(s)

Cooking spray

2 spray(s)

Instructions

  1. In a small bowl, combine honey mustard and mayonnaise; evenly divide among 4 slices of bread. Place 2 slices cheese and 2 slices ham on each of 2 bread slices; cover with remaining bread slices.
  2. Whisk eggs in a shallow bowl; add sandwiches to bowl one at a time and flip to coat both sides.
  3. Off heat, coat a large skillet with cooking spray; set over medium-low heat. Cook sandwiches, flipping once, until cheese is melted and golden on outside, about 4 to 5 minutes per side. Yields 1 sandwich per serving.
