Here’s Katie’s creative way to give this comfort food-favorite a little makeover, making it both easier and healthier. It’s made with convenience foods such as packaged shredded cheese and store-bought marinara (Vero Gusto Heritage Marinara is Katie’s new fave) and pairs so well with your favorite pasta or spiralized veggies tossed with extra sauce and sprinkled with some Parmesan.

Ingredients

Cooking spray

4 spray(s)

Uncooked ground chicken breast

1 pound(s)

Garlic powder

1 tsp

Dried oregano

1 tsp

Kosher salt

¾ tsp

Black pepper

¼ tsp, freshly ground

Store-bought marinara sauce

1½ cup(s)

Shredded part skim mozzarella cheese

1 cup(s)

Grated Parmesan cheese

2 Tbsp

Fresh basil

4 leaf/leaves, torn

Instructions

  1. Preheat oven to 400°F. Coat an ovenproof 9- or 10-inch skillet with cooking spray.
  2. In a medium bowl, combine chicken with garlic powder, oregano, salt, and pepper. Transfer to prepared skillet and using your fingers, spread into a thin layer that covers bottom of skillet. Bake 8 to 10 minutes.
  3. Remove from oven, spoon marinara over top, and sprinkle with both types of cheese. Return to oven and bake until cheese is golden brown and bubbly, about 15 to 20 minutes. Remove from oven and garnish with basil.
  4. Serving size: ¼ of skillet
