Reminiscent of classic chicken parmesan, a juicy chicken breast is covered with zesty tomato sauce and is smothered with two types of melty cheese. Here, store bought polenta rounds stand-in for the pasta and slices of Roma tomatoes and basil leaves give the dish a burst of fresh flavor. To prevent the melted cheese from sticking to the aluminum foil once the cooked packet is opened, coat the foil with cooking spray before assembling. You can bake the chicken and polenta on a sheet pan in a 350°F oven if you prefer.
