You can have this Italian meal-for-one ready to serve hot-off-the-grill in less than 30 minutes. Reminiscent of classic chicken parmesan, a juicy chicken breast is covered with zesty tomato sauce and is smothered with two types of melty cheese. Here, store bought polenta rounds stand-in for the pasta and slices of Roma tomatoes and basil leaves give the dish a burst of fresh flavor. To prevent the melted cheese from sticking to the aluminum foil once the cooked packet is opened, coat the foil with cooking spray before assembling. You can bake the chicken and polenta on a sheet pan in a 350°F oven if you prefer.

Cooking spray

Uncooked boneless skinless chicken breast

4 oz

Fat free ready-to-eat polenta (in tube)

2½ oz, cut into two thick rounds

Table salt

1 pinch(es)

Black pepper

1 pinch(es)

Store-bought pizza sauce

2 Tbsp

Plum tomato

1 medium, or campari tomato, sliced

Shredded Parmigiano Reggiano cheese

2 Tbsp, divided

Fresh mozzarella cheese

1 oz, diced

Fresh basil

2 Tbsp, fresh leaves, sliced

Instructions

  1. Preheat outdoor grill to medium-high. Tear off a 20-inch long piece of aluminum foil; coat with cooking spray.
  2. Sprinkle chicken and polenta with a few pinches salt and pepper; place side by side in center of foil. Spread chicken and polenta with pizza sauce; top with tomatoes and sprinkle with 1 Tbsp Parmesan.
  3. Bring short ends of foil together and fold to seal; fold in sides to seal. Place packet on grill; cook until chicken is cooked through, 10-12 minutes. Sprinkle remaining Parmesan and mozzarella cheese over top; sprinkle with basil.
  4. Makes 1 serving.
