A creamy herbed mayo mixture, lightened with Greek yogurt, makes these cute sliders lick-your-fingers good. They’re a portable, protein-packed lunch that comes together in a flash when you have hard-cooked eggs and cooked turkey bacon on hand. They also hold up well for up to three days, so you can double or triple the recipe for meal prep, if you’d like. Do try to grind your black pepper fresh for the best flavor; pre-ground pepper can taste musty.

Ingredients

Light mayonnaise

1 Tbsp

Plain fat free Greek yogurt

1 Tbsp

Fresh basil

1 tsp, finely chopped

Chives

1 tsp, finely chopped

Black pepper

½ tsp, divided

Hard boiled egg

6 item(s), large, large, halved lengthwise

Plum tomato

1 medium, cut into 12 thin slices

Cooked turkey bacon

6 slice(s), halved

Lettuce

6 leaf/leaves, large, such as Little Gem, or larger leaves torn into small pieces

Instructions

  1. Combine mayonnaise, yogurt, basil, chives, and ¼ teaspoon pepper in a small bowl. Spread mayonnaise mixture evenly over cut sides of egg halves. Layer 2 tomato slices, 2 bacon halves, and 1 lettuce leaf over bottom half of each egg. Top with top halves of eggs, cut side down. Sprinkle evenly with remaining ¼ teaspoon pepper.
