Ingredients

Extra lean beef mince (5% fat), raw

500 g

Breadcrumbs, fresh

50 g

Coriander, fresh

3 tablespoon(s), chopped

Santa Maria Medium Fajita Seasoning Mix

30 g

Onion

1 medium, chopped finely

Calorie controlled cooking spray

Kidney Beans, cooked

410 g, drained and rinsed

Tomato

2 medium, de-seeded and chopped finely

Lime

1 medium, juice of 1

Instructions

  1. In a large bowl, mix together the beef mince, breadcrumbs, 2 tablespoons coriander, the fajita spice mix and three quarters of the onion. With slightly wet hands, shape into four large patties.
  2. Preheat the grill to medium high. Put the patties on a foil-lined grill tray and spray with the cooking spray. Cook gently under the grill for 10-12 minutes, turning halfway, until cooked through.
  3. Meanwhile, in another small bowl, mix together the kidney beans, tomatoes, lime juice, remaining coriander and onion. Serve each person one patty with a quarter of the tomato salsa.
