Ingredients

Reduced fat pork sausages, raw

8 sausage(s)

Sweet potato, raw

2 medium, peeled and cut into wedges

Red onion

2 small, cut into wedges

Red pepper

1 medium, deseeded and cut into strips

Yellow pepper

1 medium, deseeded and cut into strips

Garlic

4 clove(s)

Wholegrain Mustard

1 tablespoon(s), level

Paprika

½ teaspoon(s), level

220 g, vine

Instructions

  1. Preheat the oven to 200°C, fan 180°C, gas mark 6. Put the sausages, sweet potatoes, onions, peppers and garlic in a large bowl.
  2. Add the mustard and paprika, then mist everything with cooking spray and mix together with your hands until everything is coated.
  3. Spread out the sausages and vegetables in a large roasting tin and bake for 30 minutes. Add the tomatoes to the tin and bake for a further 15 minutes or until the sweet potatoes are cooked through.
