Pork escalopes with Asian slaw & sesame seeds

This is ideal for a midweek meal: the combination of quick-cooked pork and crunchy Asian salad will fill you up nicely, and it’s ready in a flash

Ingredients

Pork Escalope, Raw

4 medium

Light soy sauce

1 tablespoon(s)

Calorie controlled cooking spray

4 spray(s)

Cabbage

4 portion(s), medium, white, sliced

Carrots, raw

1 medium, peeled and grated

Red onion

1 small, very finely sliced

Mange-tout

100 g, halved

Chilli, green or red

1 individual, red, deseeded and chopped

Lime Juice, Fresh

60 ml

Root Ginger

1 inch slice(s), peeled and grated

Coriander, fresh

15 g, chopped

Sesame Seeds

1 tablespoon(s), toasted

Instructions

  1. Put the pork escalopes into a shallow dish and spoon over the soy sauce. Set aside to marinate for around 5 minutes.
  2. Heat a large nonstick frying pan over a high heat and mist with cooking spray. Cook the pork for 2-3 minutes each side, reserving the residual soy sauce, then pour the soy into the pan, letting it sizzle and reduce.
  3. Meanwhile, mix together all the remaining ingredients with half the sesame seeds. Serve with the pork and pan juices, garnished with the remaining sesame seeds.

Notes

Try a variation on this dish and replace the pork escalopes with 320g king prawns. Remember to adjust the SmartPoints.
