Ingredients

Sweet potato, raw

2 medium, peeled and thickly-sliced

Green pepper

1 medium, sliced

Red pepper

1 medium, sliced

Red onion

1 small, sliced

Garlic

4 clove(s), skin left on and gently crushed

Tomato

3 large, sliced

Chicken breast, skinless, raw

4 medium, slashed

Rapeseed Oil

1 tablespoon(s)

Oregano, Dried

1 teaspoon(s), level

Paprika

2 teaspoon(s), level, smoked

Red wine vinegar

1 tablespoon(s)

Coriander, fresh

2 tablespoon(s), chopped

Lime

1 medium, cut into wedges to serve

Instructions

  1. Preheat the oven to 200°C, fan 180°C, gas mark 6. Put the sweet potatoes, peppers, red onion, garlic cloves and tomatoes into a large baking dish. Season to taste. Cover with foil and bake for 30 minutes.
  2. Combine the chicken breasts with the oil, oregano, smoked paprika and red wine vinegar. Add to the tin, pour over any remaining marinade and bake, uncovered, for 20-25 minutes.
  3. Scatter over the fresh coriander and serve with lime wedges.
