Ingredients

Chorizo Sausage

100 g, finely diced

Cherry Tomatoes

125 g, halved

Spinach

125 g, young leaf

Garlic

2 clove(s), crushed

Chilli flakes

½ teaspoon(s), level

Gnocchi, Fresh

500 g

Light Mozzarella

100 g, torn

Salad leaves

4 portion(s), to serve

Instructions

  1. Fry the chorizo in a large nonstick ovenproof frying pan over a medium-high heat for 4-5 minutes, or until crisp. Add the tomatoes and cook for 5 minutes, until just softened.
  2. Stir in the spinach and cook for 1-2 minutes, until wilted. Add the garlic and chilli flakes and cook for 1 minute, then remove from the heat and season to taste.
  3. Meanwhile, cook the gnocchi in a large pan of boiling water for 2-3 minutes, until tender. Drain well, then stir through the chorizo mixture. Heat the grill to high.
  4. Scatter the mozzarella over the gnocchi and chorizo mixture, then cook under the hot grill for 8-10 minutes, or until the cheese is melted and bubbling. Serve with the salad on the side.
