Hosting a Boxing Day do? Whip up these little gems using your leftover Christmas cake

Ingredients

Sugar Free Jelly Crystals

1 pack(s), (11.5g) raspberry

Plain Fruit Cake (no icing)

200 g

Unsweetened Orange Juice

2 tablespoon(s)

Low Fat Custard Ready to Serve

375 g

Fat free vanilla yogurt

300 g

Strawberries

80 g

Blueberries

80 g

Raspberries

80 g

Instructions

  1. Prepare the jelly to pack instructions, then pour the mixture into a shallow dish and chill in the fridge for 3 hours or until the jelly is set.
  2. Assemble the mini trifles. Break the cake into bite-size pieces, then divide between 8 x 185ml dessert glasses. Spoon over the orange juice followed by the jelly, custard and yogurt. Scatter over the berries and serve.

Notes

You can use any berries in this recipe, or try festive pomegranate seeds. You can prep and assemble these trifles the night before – just hold off adding the yogurt and berries until you’re ready to serve.
