This is a succulent sweet treat that will definitely be on the menu with its fruity flavour.

Ingredients

Mango

1 medium

99% fat-free, plain or natural yoghurt, unsweetened

150 g

Egg(s)

1 medium

White chocolate

50 g, chopped

White self-raising flour

1 cup(s), (150g)

Bicarbonate of soda

¼ tsp

Caster sugar

Instructions

  1. Preheat oven to 180°C.
  2. Peel mango and remove cheeks. Chop half the mango and thinly slice remaining half.
  3. Whisk yoghurt and egg in a bowl until smooth. Stir through the chopped mango and white chocolate.
  4. Sift self-raising flour and bicarbonate of soda into a large bowl. Stir in caster sugar until combined. Make a well in the centre and stir in yoghurt mixture until just combined. Spoon into WW Loaf Tin and arrange sliced mango on top.
  5. Bake for 45 minutes or until a skewer inserted in the centre of the loaf comes out clean. Set loaf aside in tin for 10 minutes before turning out onto a wire rack to cool.
