Granitas are an easy, refreshing frozen treat. When you use naturally sweet, juicy fruit that’s in season, no additional sugar is needed. To achieve a perfect, flaky snow-cone texture, scrape the mixture with a fork every 30 minutes until it is frozen. Before serving, give the mixture one last scrape with the fork to freshen it up.

Ingredients

Watermelon

6 cup(s), (960g), chopped, seedless

Lemon juice

1 tbs

Fresh basil

2 tbs, chopped, plus extra for garnish

Instructions

  1. Purée watermelon and lemon juice in a large blender or food processor, until smooth. Add 2 tablespoons basil and pulse to combine. Pour into a 23cm round pie dish or 22cm square cake tin. Freeze for 30 minutes. Remove from freezer and use a fork to stir any frozen bits around edge into the centre. Continue to stir and scrape frozen fruit from edges to centre every 30 minutes until granita is completely frozen, about 6 hours. Spoon into bowls and serve garnished with extra basil leaves.

Notes

If you have a smaller blender or food processor, purée the fruit in 2-3 batches, so you do not burn out the motor.
