Walnut spice biscuits

These make a lovely ‘just-because’ gift- pop in cellophane with ribbon and give to someone special.

Ingredients

Reduced fat oil spread

3 tbs, (60g)

Butter

60 g, softened

Brown sugar

½ cup(s), (110g)

Caster sugar

½ cup(s), (110g)

Egg(s)

1 medium, lightly beaten

Walnuts

1 cup(s), (110g), toasted

Plain flour

1¾ cup(s), (260g)

White self-raising flour

¼ cup(s), (35g)

Mixed spice

2 tsp

Instructions

  1. Using an electric mixer, beat the spread, butter and sugars in a medium bowl until just combined. Stir in the egg. Coarsely chop half the walnuts. Sift in the flours. Stir in the mixed spice and chopped walnuts.
  2. Divide the dough into 2 portions. Gently roll each portion into a 4cm x 20cm log. Finely chop the remaining walnuts and roll logs gently in the walnuts to coat. Wrap logs tightly in foil, twisting the ends to tighten. Place in the fridge for 2-3 hours or until firm.
  3. Preheat oven to 180°C. Line 2 baking trays with baking paper. Cut the dough into 3mm slices and arrange on the prepared trays, leaving room for spreading. Bake for 10-15 minutes or until golden. Allow to cool on trays for 5 minutes before placing on wire racks to cool completely. Serve.
