Recipe from Weight-loss Success Cookbook. Recipe by WW Ambassador Vic. Melt in your mouth, soft and crumbly, this healthy version of coconut shortbread is super easy, using just 3 ingredients.

Ingredients

Reduced fat oil spread

70 g

Granulated stevia sweetener

100 g

Coconut flour

60 g

Instructions

  1. Preheat oven to 150°C.
  2. Beat oil spread and sweetener in a medium bowl with electric beaters until pale and creamy. Stir in coconut flour and 1 tablespoon water until just combined.
  3. Divide mixture evenly between 16 holes of a 30 ml capacity silicone mini muffin tray. Bake for about 12 minutes or until pale golden. Completely cool shortbreads in tray before serving.

Notes

TIP: Shortbread will firm on cooling. Store in an airtight container for up to 10 days. You can also use silicone mini flower-shaped muffin trays for a decorative look.
