Egg white

1 medium

Canned asparagus, drained

cup(s), finely chopped, (65g), chopped

Grated parmesan cheese

1 tbs

Tomato(es)

½ medium, roma variety, chopped

Green shallot(s)

1 tbs, chopped

Instructions

  1. Whisk egg and egg white and in a 300ml-capacity microwave-safe mug. Add asparagus and season with salt and pepper.
  2. Microwave on High (100%) for 45 seconds. Remove from microwave. Stir and sprinkle over parmesan. Microwave for a further 15 seconds or until eggs are set but still creamy. Sprinkle with tomato and shallot to serve.
