Poaching pears doesn’t need to be difficult or saved for fine dining. With just 5 ingredients popped into a slow-cooker, they practically cook themselves and the result is a restaurant quality dessert.

Ingredients

Pear(s)

4 medium, firm, ripe

Lemon juice

2 tbs

Fresh lemon rind

1 tbs, 5cm strip

Granulated stevia sweetener

3 tsp

Vanilla bean

½ whole, split lengthways, seeds scraped

Instructions

  1. Peel pears and cut in half lengthways. Use a teaspoon to scoop out the cores. Place in a 4.5 litres (18-cup) slow cooker. Cover with 1.5 litres (6-cups) water. Add juice, rind, stevia, vanilla bean and vanilla seeds.
  2. Lay a sheet of baking paper over pears and top with a small plate to keep them submerged. Cook, covered, on low for 4 hours (or high for 2 hours). Serve pears drizzled with a little poaching liquid.

Notes

SERVING SUGGESTION: No-fat no-added-sugar vanilla yoghurt.
