These melt-in-the-mouth biscuits will remind you why the simple things in life are often the best!

Ingredients

Reduced fat oil spread

125 g

Caster sugar

½ cup(s), (110g)

Vanilla essence

1 tsp

Skim milk

¼ cup(s), (60ml)

White self-raising flour

1½ cup(s), (225g)

Custard powder

½ cup(s), (65g)

Instructions

  1. Preheat oven to 180°C. Line 2 baking trays with baking paper.
  2. Using electric beaters, beat oil spread, sugar and vanilla in a medium bowl until pale and creamy.
  3. Stir in milk, flour and custard powder until combined. Drop teaspoons of mixture, approximately 3 cm apart, onto prepared trays. Bake for 12–15 minutes, or until lightly browned. Stand on trays for 5 minutes before transferring to a wire rack to cool. Serve.

Notes

TIP: Biscuits will keep in an airtight container in a cool, dry place for up to 2 weeks.
