To make even carrot sticks, trim a small piece down one side and use this as a stable base so it doesn’t roll off the board.

Ingredients

Rice wine vinegar

2 tsp

Caster sugar

½ tsp

Carrot(s)

50 g, cut into thin matchsticks

Red onion

¼ small, thinly sliced

Wholemeal bread roll

140 g, (buy 2 x 70g) sesame seeds variety

Light whole egg mayonnaise

3 tsp

Mixed salad leaves

½ cup(s), (15g)

Skinless turkey breast, baked or roasted

100 g

Fresh coriander

1 tbs

Instructions

  1. Combine vinegar and sugar in a small bowl and stir to dissolve the sugar. Add carrot and onion, toss to combine and set aside for 30 minutes, stirring occasionally.
  2. Split the bread rolls down the top centre. Open rolls out and spread with mayonnaise. Fill with salad leaves, turkey and pickled vegetables. Season with salt and pepper. Top with coriander to serve.

Notes

If you don’t have leftover roast turkey, you can use shaved turkey from the deli or shredded skinless barbecued chicken breast.
