Who said salad needs to be boring? This creamy, zingy dressing will get your tastebuds dancing. Plus the combination of protein-rich tuna and fibre-packed veggies is sure to leave you feeling satisfied.

Ingredients

Green string beans

500 g, trimmed

Zucchini

4 large, spiralised

Tuna, canned in springwater, drained

285 g, (1 x 425g can)

Cherry tomatoes

250 g, halved

Oil spray

1 x 3 second spray(s)

99% fat-free, plain or natural yoghurt, unsweetened

2 tbs

Fresh flat-leaf parsley

2 tbs, chopped

Capers, rinsed, drained

2 tsp, chopped

Garlic

1 clove(s), crushed

Dijon mustard

½ tsp

Lemon juice

1 tbs

Instructions

  1. Add beans to a saucepan of boiling water. Boil for 2 minutes, drain and refresh under cold running water, then drain well.
  2. Lightly spray a large non-stick frying pan with oil and heat over medium heat. Cook zucchini, stirring for 1-2 minutes or until softened. Season and set aside.
  3. To make dressing, mix yoghurt, parsley, capers, garlic, mustard and lemon juice in a small bowl until combined.
  4. Place tuna, beans, zucchini, tomatoes and dressing in a large bowl. Season with salt and pepper and toss to combine. Divide among 4 plates and serve.

Notes

Use a vegetable peeler if you don’t have a spiralizer.
