These energy balls can be made in advance and stored in the fridge for up to 5 days, making them perfect for a grab-and-go snack.

Ingredients

Blanched almonds

cup(s), (110g)

Rolled oats, dry

¼ cup(s), (20g)

Linseed or flaxseed

1 tbs

Fresh dates

6 individual, pitted

Dried apple

2 cup(s), (110g) coarsely chopped

Ground cinnamon

½ tsp

Instructions

  1. Process almonds and oats in a food processor until finely chopped (do not over-process). Add linseeds, dates, apple and cinnamon. Process until well combined.
  2. Roll rounded teaspoons of mixture into balls. Place on a plate. Cover and place in fridge for 1 hour before serving.

Notes

TIPS: If the mixture is a little sticky, place it in the freezer for 15 minutes before rolling. Store leftovers in an airtight container in the fridge for up to 5 days.
