Slow-cooked apples with sultana and honey

The simplest of desserts can often be the most satisfying. Cook the apples until they are tender and then cut them in half to reveal the sweet nutty centre.

Ingredients

Muesli bar with nuts

40 g, finely chopped

Honey

1 tbs

Sultanas

2 tbs

Shredded or desiccated coconut

1 tbs

Green apple, unpeeled

4 large, cored

Cloves

4 whole

Orange(s)

1 medium

Instructions

  1. Combine bars, honey, sultanas and coconut in a small bowl. Press sultana mixture evenly into apple cavities. Place apples and cloves in a 4.5 litre (18-cup) slow cooker.
  2. Squeeze juice from orange and pour into a small jug. Add enough water to make 1 cup (250ml) liquid. Pour over apples. Cook, covered, on high for 2 hours or until apples are tender.
  3. Cut apples in half. Spoon over juices from cooker to serve.

Notes

SERVING SUGGESTION: reduced-fat, vanilla ice cream.
