This wrap is a great way to help add beans to a meal. They will give the wrap bulk and compliment the pulled pork. In only 10 minutes you can have a fresh, filling wrap for the day’s lunch.

Ingredients

Corn tortilla

40 g, (1 x 40g tortilla)

Iceberg lettuce

1 cup(s), shredded, (60g) shredded

Rocket

10 g, baby leaves

Pulled pork

50 g

Four bean mix, canned, rinsed and drained

½ cup(s), (80g)

Tomato-based salsa

1½ tbs

Instructions

  1. Warm tortilla and pork, separately in microwave following packet instructions.
  2. Top tortilla with lettuce, rocket and pork. Combine bean mix and salsa in a small bowl. Season with salt and pepper. Spoon bean mixture into centre of tortilla. Roll tightly to enclose filling. Serve.

Notes

SERVING SUGGESTION: Mixed salad leaves. TIP: Pulled pork is available in packets in the deli-meat section of the chiller cabinets in most supermarkets. If unavailable you can use sliced roast pork.
