Spinach, scrambled egg, grated cheese and veggie sausage chunks are folded in a wrap, then toasted to crispy perfection. We’ve used barley wraps for extra fibre, but you can use any wrap you like

Ingredients

Vegetarian sausage

100 g, (2 x 50g sausages)

Baby spinach

2 cup(s), (40g)

Egg(s)

2 medium

Barley wrap(s)

2 individual, (2 x 45g wraps)

Light tasty cheese

¼ cup(s), grated, grated, (30g)

Oil spray

3 x 3 second spray(s)

Instructions

  1. Lightly spray a large non-stick frying pan with oil and heat over medium heat. Cook sausages, turning occasionally, for 2-3 minutes, until hot. Transfer to a plate and set aside. Add spinach to pan and cook for 30 seconds or until wilted. Transfer to a small bowl and set aside.
  2. Whisk eggs and 1 tablespoon water in a small bowl. Season with salt. Lightly spray the same non-stick frying pan with oil and heat over medium heat. Pour egg mixture into pan and cook, stirring occasionally, for about 1 minute or until scrambled and just set.
  3. To assemble, make a cut in each wrap from the centre to the bottom edge. Place spinach over the bottom-right quarter. Slice sausages and arrange over the top-right quarter. Place egg over the top-left quarter and season with pepper. Sprinkle cheese over the bottom-left quarter.
  4. Starting from the bottom-right quarter, fold spinach and the wrap over onto the sausage in the top-right quarter. Continue folding the wrap in an anticlockwise direction over the top-left quarter, then onto the bottom-left quarter to enclose fillings and form a triangle.
  5. Wipe frying pan clean with paper towel, lightly spray again with oil and heat over medium heat. Place the folded wraps in the pan and cook for about 2 minutes or until golden underneath. Carefully turn and cook until the other side is golden and cheese is melted. Serve.

Notes

Cooking tip: Instead of toasting wraps in the pan, you can use a sandwich press to toast for 1-2 minutes until golden and crisp on both sides.
