Marinate the pork in the peanut sauce overnight to reduce the prep and maximise the flavour!

Ingredients

Light peanut butter

50 g

Soy sauce

2 tbs

Garlic

1 clove(s), large, crushed

Fresh ginger

1 tbs, (5cm piece) finely grated

Pork medallion or loin steak, raw

350 g, diced

Wild rice

1 cup(s), (160g)

Frozen green peas

100 g

Red capsicum

1 medium, sliced

Green capsicum

1 medium, sliced

Fresh red chilli

1 whole, sliced

Green shallot(s)

4 individual, sliced

Oil spray

1 x 3 second spray(s)

Instructions

  1. Combine peanut butter, soy, garlic and ginger in a shallow dish. Add pork and turn to coat. Cover and place in fridge for 30 minutes.
  2. Meanwhile, cook rice following packet instructions. Add peas for last 2 minutes of cooking. Drain
  3. Lightly spray a large non-stick frying pan with oil and heat over medium heat. Cook pork, stirring, for 3-4 minutes or until browned. Add capsicum and 1 tablespoon water and cook,stirring, for 3-4 minutes or until pork is cooked through.
  4. Serve rice and peas with pork mixture, sprinkled with chilli and shallots.

Notes

SERVING SUGGESTION: Serve with lime wedges. TIPS: Wild rice is not actually rice, but a type of grass. It has a slightly chewy texture and is gluten-free. To make this recipe gluten-free, use gluten-free soy sauce.
