Crispy and golden on the outside, sweet and chewy on the inside – no wonder this is a new breakfast favourite for WW members!

Ingredients

Rolled oats, dry

100 g

Baking powder

1 tsp

Ground cinnamon

½ tsp

Skim milk

½ cup(s), (125ml)

Banana(s)

1 cup(s), mashed

Egg(s)

1 medium, lightly beaten

99% fat-free, plain Greek yoghurt, unsweetened

100 g, to serve

Fresh blueberries

125 g, to serve

Honey

2 tsp, to serve

Oil spray

1 x 3 second spray(s)

Instructions

  1. Combine oats, baking powder, cinnamon and ¼ teaspoon salt in a large bowl. Make a well in the centre, add milk, banana and egg and whisk until combined.
  2. Preheat a 20cm waffle maker on high heat. Once hot, lightly spray with oil, spoon in one-quarter of the batter to evenly coat the waffle maker. Close lid and cook for 4-5 minutes or until crisp around the edges and cooked through in centre. Repeat with remaining batter to make 4 waffles.
  3. Serve waffles topped with yoghurt, blueberries and honey.

Notes

Mix 2 tablespoons peanut butter powder (contains nuts) with 1½ tablespoons water, then whisk into the batter along with 20g chopped raisins. Serve waffles topped with sliced banana.
