These on the go snack bars are so easy to make. Store them in the fridge or freezer for a quick morning or afternoon tea option. Packed with oats, dates and seeds, to keep you going through the day.

Ingredients

Plain peanut butter powder

cup(s), (35g)

Fresh dates

10 individual, pitted, roughly chopped

Rolled oats, dry

1½ cup(s), (135g)

Pumpkin seeds (pepitas)

2 tbs, toasted

Vanilla bean extract, alcohol free

1 tsp

Maple syrup

1 tbs

Instructions

  1. Line a 10cm x 20cm (base measurement) loaf tin with baking paper.
  2. Place peanut butter powder in a small bowl. Gradually add 1/3 cup (85ml) water, stirring, until a peanut butter consistency forms.
  3. Process dates and peanut butter paste in a food processor until combined. Transfer to a large bowl. Add oats, pepitas, vanilla and maple syrup. Mix with clean wet hands until mixture is combined. Press firmly and evenly into prepared tin. Cover with plastic wrap and place in freezer for 20 minutes. Cut into 8 bars.

Notes

TIP: To toast oats and pepitas for a nuttier flavour, stir in a dry frying pan over a medium-low heat for about 5 minutes or until lightly browned. Bars will keep in a container in the fridge for 1 week or in the freezer for 1 month.
