Oats are super versatile! These baked choc orange oats by WW Coach Nikki (@smart.eats.with.nikki) are ready in less than 30 minutes and are best served fresh.

Ingredients

Banana(s)

1 medium, halved

Rolled oats, dry

cup(s), (30g)

Wheat bran

1½ tbs

Baking powder

½ tsp

Cocoa powder

1 tbs

Unsweetened almond milk

cup(s), (80ml)

Orange rind

4 tsp, finely grated, (1 tsp to serve)

Freshly squeezed orange juice

1 tbs

99% fat-free, plain or natural yoghurt, unsweetened

1 tbs

Orange(s)

½ small, sliced

Diet chocolate topping

2 tsp, (sugar-free)

Cacao nibs

½ tsp

Instructions

  1. Mash half the banana in a small bowl. Add oats, bran, baking powder, cocoa, almond milk, 2 teaspoons orange zest, orange juice and a pinch of salt. Stir to combine.
  2. Spoon half the oat mixture into a small ovenproof dish or ramekin. Slice remaining banana. Press three-quarters of the banana slices into oat mixture. Spoon over remaining oat mixture. Top with remaining banana slices and 1 teaspoon orange zest.
  3. Preheat air fryer to 180°C. Add dish to basket and cook for 25–30 minutes, until golden and crisp on top. Serve warm, topped with yoghurt, orange, chocolate topping, cocoa nibs and extra orange zest.

COOK'S TIP: If you don’t have an air fryer, bake in a 180°C oven for 25–30 minutes, until golden and crisp on top.
