Ingredients

Fresh raspberries

25 g, chopped

Fresh blueberries

25 g, chopped

Blackberries

25 g, chopped

White self-raising flour

2 tbs

Granulated stevia sweetener

2 tsp

Reduced fat oil spread

2 tsp

Skim milk

3 tsp

Instructions

  1. Place berries in a 1¾ cup (435ml) microwave-safe mug.
  2. Place flour, sweetener and spread in a small bowl. Using your fingers, rub spread into flour until mixture resembles coarse breadcrumbs. Stir in milk until combined. Spoon mixture over berries. Place mug on a paper towel in the microwave (in case of splatters) and microwave on High (100%) for 1½ minutes or until cooked.
  3. Set aside for 2 minutes before serving.

Notes

SERVING SUGGESTION: Reduced-fat vanilla ice-cream. Note: You could use any alternate sweetener designed for baking. We used a mix of fresh strawberries, blueberries, blackberries and raspberries, but you can also use frozen berries. The fruit layer will be a bit juicier. Add it: 2 tsp toasted flaked almonds sprinkled over batter in Step 2. Swap it: White self-raising flour for wholemeal self-raising flour.
