Made with good-for-you seeds, fruit and oats, these little bites are simply perfect for a rushed morning.

Ingredients

Dried dates

½ cup(s), (95g), chopped

Banana(s)

1 small, coarsely chopped

Reduced fat oil spread

Brown sugar

¼ cup(s), (55g)

Rolled oats, dry

¾ cup(s), (65g)

Wheat flakes

½ cup(s), (20g)

Shredded or desiccated coconut

cup(s), (25g) flaked variety

White self-raising flour

½ cup(s), (75g)

Sultanas

cup(s), (55g)

Dried apricots

cup(s), (50g), finely chopped

Chia seeds

45 g, (1/4 cup) black variety

Pepitas

¼ cup(s), (35g)

Instructions

  1. Preheat oven to 180°C or 160°C fan-forced. Lightly spray a 19cm x 29cm slice tin with oil. Line tin with baking paper, allowing paper to hang 5cm over the 2 long sides.
  2. Combine dates and ½ cup (125ml) boiling water in a small heatproof bowl. Cover and set aside for 20 minutes to soften. Drain, reserving 2 tablespoons liquid. Process dates, reserved liquid and banana in a food processor until smooth.
  3. Stir spread and sugar in a medium saucepan over medium heat until sugar has dissolved. Combine oats, wheat flakes, coconut, flour, sultanas, apricots, chia seeds and pepitas in a large bowl. Stir in spread and date mixtures until combined.
  4. Press mixture firmly into prepared tin. Bake for 20–25 minutes or until golden and firm. Cool in pan before cutting into 16 slices. Serve.

TIP: Slice will keep in an airtight container for up to 2 weeks.
