Sweet little gluten free white chia seed pots sweetened with fresh seasonal berries, maple syrup and vanilla paste. Top with chopped pistachios and a pinch of cinnamon for a delicate taste.

Ingredients

Chia seeds

2 tbs, white

Light canned coconut milk

½ cup(s), (125ml)

99% fat-free, plain or natural yoghurt, unsweetened

1 cup(s), (240g)

Vanilla bean paste

½ tsp

Fresh strawberries

125 g, sliced

Fresh raspberries

125 g

Fresh blueberries

125 g

Pistachios

10 piece(s), toasted, coarsely chopped

Pumpkin seeds (pepitas)

1 tbs, toasted, coarsely chopped

Ground cinnamon

¼ tsp, pinch

Maple syrup

1 tbs

Instructions

  1. Stir chia, coconut milk, yoghurt and vanilla bean paste in a bowl until combined. Cover and chill for 2-3 hours or until thickened.
  2. Divide half the chia mixture into 4 serving glasses. Top with half the berries, then remaining chia mixture and remaining berries. Chill until ready to serve.
  3. Sprinkle chia pots with pistachio, pepita and cinnamon and drizzle with syrup.

Notes

TIP: Chia pots can be made and refrigerated in a screw-top jar the day before.
